Joining in the food fun!

My blog friend Nini does something fun every Thursday and I've begun to look forward to it every.single.week. Its called Thursday Recipe Rodeo and she has posted some amazing recipes that my family loves! I think our all time favorite is the one I'm posting here, the Blueberry Crumble Pie {my mouth waters whenever I think of it} There are so many more recipes that we've loved, it would take too long to mention them all.
We're going to my friend's house tonight for dinner and I offered to bring dessert, simply because I've been needing an excuse to make and eat this pie again!

**I'm going to do my best to join in the fun and post a recipe every Thursday.

I know this is a repost, but I wanted to share it on my site since we love it so much. So for those of you who read Nini's blog, sorry for the repeat.

Blueberry Crumble Pie

* 1 of your favorite homemade pie crusts or ready-made pie crust
* 5 Cups fresh blueberries
* 1 Tablespoon lemon juice
* 1 Cup granulated sugar
* 1/3 Cup all-purpose flour
* 1/4 teaspoon salt
* 1 teaspoon ground cinnamon

Topping
* 1/2 Cup all-purpose flour
* 1/4 Cup brown sugar, packed
* 1/4 Cup granulated sugar
* 2-3 Tablespoons butter

Directions

Preheat oven to 375 degrees. Fit pie crust into pie plate and crimp edges as desired. In large bowl, sprinkle blueberries with lemon juice and set aside. In another bowl, combine sugar, flour, salt and cinnamon and add to berries, stirring gently. Pour evenly into crust and prepare topping.

In medium bowl, combine flour, sugar, and brown sugar. Cut in butter and mix (I use my fingers for this) until it is in course crumbles. Sprinkle evenly over pie and bake for 40-50 minutes. Cover edges with foil if crust is browning too quickly. Enjoy!

No fair!!! I'm trying to cut OUT carbs, not find more excuses to make them a major part of my diet (but they're BLUEBERRIES!!!!). ;-)

Looks yummy...I have a feeling it would be a hit with my crowd, I'll have to try it out one of these days.

Also. You should get online soon.

hey, its not my fault you think carbs are PURE EVIL :-p

I like to use whole wheat flour, with my organic cane sugar and then I tell myself its a "healthy" dessert.

MMMMMMMMM... that sounds delicious!! It reminds me of my grandmother's apple pie recipe, it has a "crummy top" that is similiar. Now my mouth is watering. When are you bringing those to a MOMS Club event??
